Parallels won't work, it requires hardware virtualization support. VirtualBox works, but can't access the "Boot Camp" partition, so it's even slower than it already is to run VM software on a somewhat underpowered, under-RAM-ed machine like the 1000HE, even with the full 2GB RAM. I have VMWare Fusion running, but it's very slow, it's more a proof of concept than usable for productive work, but for extremely occasional use, it's OK, particularly if you're in a pinch and can't afford to shut down Mac OS X.
For other things, Wine/CrossOver may be a better idea to try, although I haven't tried either yet.
